Garlic and Parmesan separately are two staple ingredients in our house, but I also love these two together. Garlic Parmesan fries, pasta sauce, or wings? Um yes please.
Since garlic and Parmesan seem to make everything better, I thought I would try this duo on veggies. I am glad I did. So are my husband and daughter who went back for seconds last night. Since regular roasted vegetables is a go to side at our house, this was an easy way to make an enhancement to change things up a little bit. I served this with mashed potatoes and ham steak.
1 lb asparagus spears
2 Tbsp olive oil
3 cloves minced garlic
Salt and pepper
3 Tbsp shredded or grated Parmesan
Preheat your over to 400 F. Rinse the asparagus and trim the ends off. Arrange the asparagus in a single layer on a cookie sheet or pan. Toss asparagus in olive oil, garlic, and salt and pepper.
Roast for 15 minutes. Takes the asparagus out of the oven and shake the pan or use a spatula to make sure it does not stick. Sprinkle Parmesan over the asparagus and roast for another 5-10 minutes until asparagus is tender. If needed, add more salt and pepper to taste.
