I’ve mentioned before that since we’ve had our second baby I have had a harder time finding a good desk job/home life/work out balance to take off the last 12-ish pounds I want to. Here in a few months we will be celebrating “the baby’s” second birthday. Sooooo yeah. . . it’s beyond time.
I’ve started walking on my lunch breaks and downloaded the LoseIt app. Salmon patties have been a quick and easy meal in our house for a long time now. I usually pan fry them, but when I entered that into LoseIt I said, “no way Jose!!” If I am going to use up that many calories on a meal, it’s going to be for pizza. I tried baking the patties instead, and they turned out just as good if not better than their pan fried counterparts.
My husband had his with ketchup, and I had mine with sour cream. We served these was a side of Roasted Brussel Sprouts and Apples and cous cous.
Baked Salmon Patties
1 can salmon drained with the bones removed
¼ cup diced onions
1 egg
1/3 cup mayo
1 cup bread crumbs – 1/2 for mixing and 1/2 for coating
½ tsp garlic salt – more to sprinkle on top after they are cooked as needed.
½ tsp pepper – more to sprinkle on top after they are cooked as needed.
Preheat oven to 350.
Mix all ingredients in mixing bowl, including 1/2 cup of breadcrumbs, and form into patties. If the patties are not maintaining their shape very well, slowing mix in more breadcrumbs until they hold.
Pour the remaining 1/2 cup of bread crumbs in a separate bowl. Once the patties are formed coat the outside with breadcrumbs and place in a 9×13 pan that’s been coated with nonstick spray. Then spray the tops of the patties with the non-stick spray.
Cook for 30 min turning patties halfway through. Sprinkle the tops with salt and pepper and serve with whatever sauce you want.
Recently made this but we pan-fried it 😦 We will try to bake this the next time so it’s also healthier. Thank you and good luck with your pregnancy! 🙂
