Avocado Chicken Salad

Bookmark this recipe for any time you want a quick lunch or light dinner. It is a perfect warmer weather meal with a twist on an old favorite. We used leftover chicken from a roasted chicken we had the night before. Using leftover rotisserie, grilled, or canned chicken would work too. You can also use guacamole in place of avocado for another variation. Serve on toast, as a sandwich, with crackers, on a bed of lettuce, or eat it by itself.

  1. I found a recipe like this a while back that used tuna instead of chicken, and added corn. It was pretty good! Avocado is SUCH a good replacement for mayo. I’ll have to give this a whirl 🙂

  2. YUM! This sounds delicious ❤ I love the creativity of using avocados rather than mayo (and I think I'd like it better). I'm wondering that it would also be good to add a little stone ground mustard too. What do you think? So many blessings to you. Thank you for sharing.
