Balsamic Tortellini Salad

This is such a great summer side dish. This doesn’t require you to turn on your oven. You can bring it to a cook out easily or serve it home. It’s a different than your standard sides like baked beans or potato salad, even though we love those too. Heck it’s even different than your usual Italian dressing and spiral pasta salad. Plus it’s easy. I present to you Balsamic Tortellini Salad for your summer dining pleasure!

I feel like it may need a splash of bright color. If you try any variations, please let me know 🙂

Balsamic Tortellini Salad 

1 package prepared Tortellini

1/2 cup chopped kalamata or black olives

1/2 cup chopped pepperoni or salami

1/2 cup small cubes of mozzarella cheese

1/4 cup grated Parmesan cheese

For the dressing:

1/4 cup olive oil

1/4 cup balsamic vinegar

1 TBS Italian seasoning

1/2 tsp salt

1/2 tsp garlic salt

1/2 tsp pepper

Cook the tortellini according to package. In a medium mixing bowl combine cooked tortellini, olives, and pepperoni.

In a separate small bowl combine all ingredients for the dressing.

Coat the tortellini mixture with the dressing. Chill in refrigerator for at least two hours. Toss with the Parmesan cheese, serve, and enjoy.

  1. Oh and it’s Vegetarian. I don’t do cheese, or garlic, but going to make this. Currently, in the UK summer has decided to opt-out and we may have had two nice days of sun.

    Today I made, a dish, Pototoes small dice, bell pepper small dice, tomatoes small dice. Then we have this thing called puffed rice. So a little oil in a wok, green chill small dice, cumin seeds, Add the potatoes, cook for a bit, add bell peppers, cook for a bit, oh yeah dried chick peas (that you can eat), cook for a bit, bit of salt, extra chilli powder if needed, tiny tiny Asafodida, tomatoes, cook for a bit. Once all cooked – ie potatoes soft , add the puffed rice. more seasoning and lemon /lime to taste. yummy
