So apparently I am going to have a summer grilled cheese sandwich series on my blog, and it continues with pizza grilled cheese. Yes you read that right. It is pretty scrumptious, and it’ll curb your desire to spend money on pizza delivery. I promise. I saute mushrooms, onions, and black olives. Then I add some pepperoni, since that’s what I like to eat on my pizza. You can substitute the filling ingredients for whatever toppings you prefer or have on hand. I do suggest using sautéed or roasted veggies though. Since the sandwich is only in the pan for a few minutes, it’s not long enough to cook the vegetables.

Chicken Pesto Grilled Cheese Sandwich
Italian Grilled Cheese Sandwich
Pizza Grilled Cheese Sandwich
2 pieces of buttered, sliced Italian bread
2-3 Tbsp marinara or spagettie sauce
1/4 cup total of desired toppings
1/4 cup of shredded cheese (I used an Italian cheese mix combo. Mozzarella or provolone would work well.)
On one side coat the pieces of bread in butter.
Build the sandwich by placing the buttered sides of the bread out. On the other sides equally spread the marinara on both slices. Add the toppings and then the cheese.
Heat skillet over medium heat. Cook sandwich on each side until golden brown. When turning the sandwich over, do it slowly and carefully so the filling does not come out.

I’m definitely going to make it. We love grilled cheese sandwiches…and pizza, too. This sounds like a perfect combination. I’m going to share it tomorrow morning on my “Jonathan Chronicles” blog. It’s a blog about The Sims, and I actually share a lot of recipes there. In the game, sims love, love, love grilled cheese sandwiches. And they have pizza delivery, too. So again, this recipe is a perfect combination. When I play the game, I get a craving for grilled cheese, and so do a lot of other players LOL. They’ll love this as much as I do. Thanks!

It’s actually a very creative hobby. A lot of players write “SimLit”, plus there are players who do nothing but build incredible houses and businesses for the rest of us. It’s a remarkable community.

My usual pizza toppings are mushrooms, black olives, onions, green peppers, hamburger, and extra cheese. Oh, and pineapple. Not sure if I’ll try including any pineapple on the sandwich. It might be good, though. 🙂

Just reporting back in. We had the sandwiches and a big salad for our dinner today. My husband and I both enjoyed it, and I plan to fix them again. I used pizza sauce, added in a few fresh herbs, and used slices of mozzarella cheese. My filling was only mushrooms. Somehow I forgot to buy black olives. I had some deli sliced roast beef, and I considered adding it in, but I went with only the mushrooms. Then the salad had peppers, artichoke hearts, and bacon bits. Next time I’m going to add a little garlic and maybe a few onions on the sandwiches. As it was, it was delicious, and so easy to do.

Not that it’s much healthier, but we had all the ingredients at home. So it was much cheaper!
