Easy Chocolate Marshmallow Cupcakes

These were a creation for my son’s birthday. He’s 4 and loves marshmallows. So I tried to figure out a way to incorporate that into his birthday cake. I blended marshmallows into the cake batter. Then I melted marshmallows and chocolate chips to use in place of icing.  We served these with vanilla ice cream, and it seemed to be a hit!


Easy Chocolate Marshmallow Cupcakes

1 chocolate box cake

Eggs, milk, butter according to package

1 bag of mini marshmallows

1 bag chocolate chips

 

For the cake:

Prep 1 chocolate box cake according to package with these modifications:

Add 1 additional egg to however many package calls for.

Use milk instead of water

Use melted butter instead of oil

Mix in 1 1/2 cups of mini marshmallows into the batter.

Bake according to package

 

For the “icing”:

When the cupcakes are cooled melt 2 cups of marshmallows and 2 cups of chocolate chips in microwave safe bowl for 30 second intervals stirring in between until marshmallows and chips are melted and blended.

Using a butter knife coat the top of the cupcakes with the icing mixture. (This part will be sticky.)

Top cupcakes with mini marshmallows and chocolate chips.

  2. Your marshmallow cupcakes look delish! I have to say though that although frosting using marshmallow is awesome (I love it), I hate how it gets gooey and then sticking to the bowl which is impossible to clean. What’s you secret for cleaning them?

    1. Thanks for the reading and what a great question. I just soaked the bowl and utensils in warm soapy water as soon as I was done icing the cupcakes. I came back about 10 minutes later and rinsed the bowl with the sink sprayer turned on with the pressure real high.

      1. Sounds easy enough – and 10 mins! 🙂 I remember I had a hard time scrubbing it all off from my glass bowl even after soaking them overnight. They just hardened up and stuck like cement. :/ I wasn’t too happy and that was the first and last time I was making frosting with marshys! LOL.

      1. I enjoy eating them out of the bag. I just have to be careful that my three year old doesn’t see me or I have to share… 😉
