These were a creation for my son’s birthday. He’s 4 and loves marshmallows. So I tried to figure out a way to incorporate that into his birthday cake. I blended marshmallows into the cake batter. Then I melted marshmallows and chocolate chips to use in place of icing. We served these with vanilla ice cream, and it seemed to be a hit!
Easy Chocolate Marshmallow Cupcakes
1 chocolate box cake
Eggs, milk, butter according to package
1 bag of mini marshmallows
1 bag chocolate chips
For the cake:
Prep 1 chocolate box cake according to package with these modifications:
Add 1 additional egg to however many package calls for.
Use milk instead of water
Use melted butter instead of oil
Mix in 1 1/2 cups of mini marshmallows into the batter.
Bake according to package
For the “icing”:
When the cupcakes are cooled melt 2 cups of marshmallows and 2 cups of chocolate chips in microwave safe bowl for 30 second intervals stirring in between until marshmallows and chips are melted and blended.
Using a butter knife coat the top of the cupcakes with the icing mixture. (This part will be sticky.)
Top cupcakes with mini marshmallows and chocolate chips.

Your marshmallow cupcakes look delish! I have to say though that although frosting using marshmallow is awesome (I love it), I hate how it gets gooey and then sticking to the bowl which is impossible to clean. What’s you secret for cleaning them?

Thanks for the reading and what a great question. I just soaked the bowl and utensils in warm soapy water as soon as I was done icing the cupcakes. I came back about 10 minutes later and rinsed the bowl with the sink sprayer turned on with the pressure real high.

Sounds easy enough – and 10 mins! 🙂 I remember I had a hard time scrubbing it all off from my glass bowl even after soaking them overnight. They just hardened up and stuck like cement. I wasn’t too happy and that was the first and last time I was making frosting with marshys! LOL.

Haha yeah I’m not sure why mine didn’t stick as bad because I know it can turn to cement. I did use a plastic bowl and got it in the soapy water right away.

Yeah they are thought of more as a kid food but paired with the chocolate chips there was tons of great texture/flavor compliments happening.
