Ready for Fall – A Meet and Greet


Thanks for stopping by the Meet and Greet. Is everyone else as ready for Fall as I am? I thought it would be fun to do a recipe share. If you aren’t a recipe/food person you are still welcome to join the party. Let’s get started!

The link I am leaving is from my friend RecipeBoxGal at LeenCuisine. I think she’s been as ready for fall as I have. She’s been posting squash recipes like crazy. Then at our house today we will probably have Frito chili pies or Indian Tacos while we watch the OU game.

  1. This is one of my favorite things to make because it is always a huge hit. I’m not a baker at all and this cake is so easy but impresses everyone. Happy Fall Y’all!!

    Chess Cake
    1 pkg. white or yellow cake mix
    1 egg
    1 stick of butter, melted and cooled
    Mix all ingredients and press into 13 X 9 baking dish.

    Filling
    2 eggs
    1 pkg. cream cheese melted and cooled
    1 tsp. vanilla
    1 box (3 3/4 cups) powdered sugar

    Mix all ingredients together, incorporating the sugar 1 cup at a time.

    Pour filling over cake. Sprinkle with cinnamon/sugar. Bake at 350 for 40-45 minutes or until set. Delicious hot or cold.

  2. Whaaaaat? Apple Nachos? Yepperz! You’ll luv ’em!

    First you need 30 large marshmallows
    Then you need 5 tablespoons butter
    And also 35 caramels
    You need also One tablespoons of water
    You need 5 apples, sliced
    Finally you need for toppings (peanuts, sprinkles, crushed candy bars, …)
    Instructions :
    First step to prepare this recipe is to melt the marshmallows & butter in a saucepan over ” be sure ” low heat.
    Step 2 : After all that you need to stir periodically till totally melted & smooth. And then mix the caramels & water in a bowl next microwave till melted. For me personally i microwaved mine 45 second intervals,and i make sure to stirring in between till the caramel was smooth.
    Step 3 : Fianlly step , now arrange the sliced apples on a plate & pour the caramel then marshmallow mixtures over them. Finally add any additional toppings serve immediately!

  3. Here is kinda healthy frosty to with the apple nachos, if you like whey, you’ll luv this recipe!

    Butterfinger Frosty
    1/8 cup cream
    7/8 cup water
    1 Tbsp (1 scoop) Designer Whey, chocolate (get at health food store)
    1 1/2 tsp Splenda
    1 1/2 tsp peanut butter, or any nut butter
    2 cups crushed ice
    Directions
    Whirl all together in a blender. Pour into a tall glass, grab a straw and enjoy!
    Nutrition Facts per Serving
    Calories 144
    Protein 5g
    Carbohydrate 4g

  4. Good Morning bigandpinkytoes. I am looking forward to fall too (and all the good food it brings). My favorite go-to is always a pasta salad and this one is my favorite.

    Artichoke Pasta Salad

    •1 cup bowtie pasta
    •1 cup artichoke hearts, cut in half
    •1/2 cup cherry tomatoes
    •1/3 cup sweet peppers, chopped
    •1/3 cup Kalamata olives
    •1/4 cup sundried tomatoes in oil

    Dressing:
    •2 Tablespoons extra virgin olive oil
    •1 Tablespoon fresh basil, finely chopped
    •1 Tablespoon garlic, minced
    •1 teaspoon creamy Dijon mustard
    •1 teaspoon light mayonnaise
    •1/2 teaspoon lemon juice
    •1/4 teaspoon Kosher salt
    •1/4 teaspoon freshly ground pepper

  5. We are doing Chili. I know everyone has their own special recipe. That way the guys can use it with fritos, tortillas or nachos. I did make chocolate cupcakes last night! And since my Noles don’t play today I have to cheer for your Sooners! Started out right though, with the earthquake!

  6. I do more than half of the cooking because I enjoy it and my wife loves coming home to having dinner all done and ready to eat. I love my slow cooker! It makes many meals and delicious leftovers.

    Fall has always been my favorite season. Growing up in New England it’s no surprise. The unbelievable colors from the changing leaves makes it a hot spot that time of year. People are called Leaf peepers! 🙂 Plus it meant we could wear hoodies again and drink cocoa by the bonfire. Opening the windows and getting fresh crisp air into your home…and lungs! I just loved everything about it.

    Now in Texas it means the end of the rampant bug season and THAT makes my life so much better. I can stop scanning the room like a ‘bug hunter’ when I walk into it… 😉 (Although the lizards start wanting in. I swear…what is this place??)
    Fall also means we can stop running the A/C 24/7 which I can’t stand because all I see when I hear it turn on is dollar bills flying out of it. 😉 It’s not pretty in west Texas in the Fall, but it’s still my favorite season. 🙂

In central Oklahoma we get a few good weeks of fall that sounds similar to your New England falls but then it also kind of sounds like you Texas fall too. I appreciate you stopping by.     1. Thanks for joining the party Angelic! How cool does it usually get in Houston during the fall? In Oklahoma City it’s usually still in the 90s till October and then goes to 60s-80s till November. Then it’s a crap shoot.

      1. Same temperatures that Oklahoma city sometimes all the way to December. My friend and I joke about mother nature having mood swings. Because on day can be cold next day we are in the 90s

  11. Everyone luvs meatballs! I happen to use golden ground flex seed instead of oats, but, honey, it’s all good!

    BBQ Meatballs
    Ingredients
    FOR MEATBALLS
    1-1/2 pound Ground Beef
    3/4 cups Oats
    1 cup Milk
    3 Tablespoons Very Finely Minced Onion
    1-1/2 teaspoon Salt
    Plenty Of Ground Black Pepper, to taste
    FOR COOKING MEATBALLS
    1 cup All-Purpose Flour (coating For Frozen Meatballs)
    Olive Oil
    FOR SAUCE
    1 cup Ketchup
    2 Tablespoons Sugar
    3 Tablespoons Vinegar
    2 Tablespoons Worcestershire
    4 Tablespoons (to 6 Tablespoons) Onion
    Preparation Instructions
    Preheat oven to 350 degrees.
    Combine all meatball ingredients. Roll into medium-small balls and place on a cookie sheet. Place sheet in freezer for five minutes.
    After 5 minutes, remove meatballs from freezer and immediately dredge in unseasoned flour.
    Brown meatballs in Olive oil until just brown. Place into a baking dish.
    Combine all sauce ingredients. Pour over meatballs and bake at 350 degrees for 45 minutes. Serve with egg noodles, mashed potatoes, or crusty French bread.

  14. Mornin’ Glory!
    So, my 93 year old mom called needing a meatloaf recipe. Her “Over 90’s Club” is putting together a cook book. LUV IT! It’s so funny she would need to reach out for a recipe. When we (7 kids) were at home, mom didn’t cook much and when she did, all I remember is minute steak and creamed corn. My brothers used to say she sold her recipes to the lunch ladies! So, it was cute when she asked for a recipe from me.
    This meatloaf recipe is all about the topping. You could pour it of shredded paper and it would taste YUMMERZ! LOL

    Meatloaf
    1 1/2 pounds ground beef
    1 egg
    1 onion, chopped
    1 cup milk
    1 cup dried bread crumbs (I use golden ground flex seed, just trying cut bak on wheat and grains)
    salt and pepper to taste
    Top of meatloaf
    2 tablespoons brown sugar
    2 tablespoons prepared mustard
    1/3 cup ketchup

    1. Preheat oven to 350 degrees F (175 degrees C).
    2. In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5×9 inch loaf pan, OR form into a loaf and place in a lightly greased 9×13 inch baking dish.
    3. In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
    4. Bake at 350 degrees F (175 degrees C) for 1 hour

    (You could serve this with creamed corn if you wish!)
