Salmon Burgers with Easy Slaw

These were inspired by a recipe I saw last summer on the Garlic Diaries. At the time I had a ton of dill from the garden that her recipe called for but was down a food processor.  This weekend we had some salmon fillets AND the ninja my husband got for his birthday, no dill though. So salmon burgers were on, but because I can never just follow a recipe here is my version. We served with roasted sweet potatoes, kinda like a different take on burgers and fries.

We make salmon patties occasionally which are similar, but just a few changes in the salmon burgers made a huge difference in the taste.

  1.  I use canned salmon for patties. For the burgers I used fresh.
  2.  Using part of the salmon in chunks and part ground makes the texture different.
  3. I make salmon patties thinner than I made the burger patties.
  4. Salmon patty recipes often call for frying them in oil. Pan frying in a lightly greased skillet made these feel and taste more burger like.
Ta-Da! Salmon Burgers with Slaw

Serves 4
Ingredients for the salmon burgers
– 4 salmon fillets, about 1 lb
– 2 garlic cloves
– Squeeze of lemon juice
– dash of cayenne pepper
– 2 dash salt and pepper
– 1/2 cup breadcrumbs
– 1 egg
– 1 chopped green onion

Ingredients for the quick slaw
– 1/4 a head of cabbage shredded
– 2 TBS softened cream cheese (can also use chive and onion cream cheese and omit     adding the chives and onion.)
– 2 TBS mayo
– 1 TBS chopped chives
– 1 TBS chopped green onion
– Dash of salt and pepper to taste

1. In a food processor blend 2 of the salmon fillets, garlic cloves, dash of cayenne pepper, squeeze of lemon juice, and a dash of salt and pepper.
2. Cut the remaining 2 salmon fillets into 1/4 inch pieces.
3. In a bowl mix ground and chopped salmon, bread crumbs, egg, and green onions.
4. Shape into 4 equal size patties. Lightly heat a medium skillet over medium low heat.
5. When the skillet is heated cook the patties until lightly browned on each side and cooked through, about 5 minutes per side.
6. To make the slaw mix all ingredients together in a small bowl. Top salmon burgers with the slaw. Eat as is or server on a bun. Enjoy!

  1. I would eat the heck out of those! Put slaw on just about anything and I’m in! Thanks for the recipe though as I had no idea how to make slaw or as the 4 year old calls it ‘cold slop’. lol

      Other slaw recipes have a ton more stuff and usually vinegar, but I went with what I had on hand, still turned out good though! Thanks for checking it out.

  3. Hay Lacey– I’d love to make this! And just got 2 little pieces of salmon today at the market. The salmon seems nicely spiced. And roasted sweet potatoes–perfect. Do your kids eat salmon?? Mine were not fish eaters when they were little. thanks for the recipe! xox
