Pumpkin Oatmeal

We had some pie pumpkins from Halloween and Thanksgiving that I wanted to use up. I popped them in the Instant Pot for 20 minutes. They came out easy to peel and easy to purée. That purée was used to make a few pumpkin dishes, but I think this oatmeal was my favorite.

The pumpkin and butter are flavorful. The flax seed adds extra protein. It’s easy to add water if you prefer a different consistency. I hope you like it as much I as I do. This recipe makes 2-3 servings.

Pumpkin Oatmeal

Ingredients
– 1 cup quick oats
– 1 cup water
– 1 cup pumpkin puree
– 1/4 cup brown sugar
– 2 Tbls butter
– 2 Tbls flax seed
– 1 Tbls cinnamon
– 1/2 tsp salt

Directions
1. Mix all ingredients in a medium pan over medium heat.
2. Stirring frequently bring the mixture to a boil.
3. Top with raisins, chopped nuts or maple syrup. Serve and enjoy!

    1. Yes! We use it several times a week and have for about a year now. We have an 8 quart Instant Pot. It did take some experimenting and getting used to. It’s really handy for lots of things. I use it most for baked potatoes and hard boiled eggs. My husband uses it for meats and soups.

      1. I have done pumpkins and spaghetti squash in it over the last week. Each took about 15-20 min. In the oven I think it would have taken me an hour or so. The peels fall off, so that’s handy.
