Ok here it is, my ‘go to’ brunch. It is easy and can be executed a gazillion different ways. It’s an open faced sandwich, usually on Italian bread or baguette slices. Topping it with a fried or poached egg is optional but encouraged. Then I serve it with a side salad made up of whatever I have on hand. Boom! That’s it. Easy and oh so delicious. For example:
Cream Cheese, Tapenade, and Ham
Here I drizzled crusty bread slices with olive oil and balsamic vinegar. Then I topped it with a layer of cream cheese, olive tapenade, and thin slices of deli meat. The salad was a mix of greens, shredded carrots, and tossed in balsamic.
Smoked Salmon and Cream Cheese
Ummmm so thinly sliced smoked salmon maybe one of the best things on the planet. It’s been available at Aldi lately making it way too accessible! Whether it’s on a bagel, English muffin, with cucumbers or capers I will eat and love it.
Croque Madame
My personal favorite, Croque Madame. It’s made of a white cheese sauce, ham, and poached egg. Oh la la …. Click here for the recipe.
Hot Ham and Cheese
In a small bowl I mixed chopped ham, shredded cheddar, mustard, and Italian seasoning. I spread the mixture on Italian bread and baked at 350 until the cheese was melted. The salad was mixed greens, shredded carrots, and sliced cucumbers.
That’s it. Take what you have and make open faced sandwiches served with a salad. You won’t spend much time in the kitchen but will be totally satisfied. Happy brunching in the new year friends!

I’d do a modified version of the crostini type one with olive oil, balsamic, and olive tampande. I also like to add hummus to really good bread and top with marinated veggies. You can buy those jarred at the store or do your own on olive oil, salt, and seasonings.
